You can't. Orthogonal projection is not supported in jPCT(-AE). You might be abel to fake it to a degree by using a narrow fov and move the camera quite far away from the object, but that has it's drawbacks too.

Just move the camera away and narrow the fov setting in camera (you might have to adjust the fov limits as well with the corresponding methods). But really, this is just a hack that might work well enough in some cases but will fail in others. It might help to know why you want to use orthogonal projection in the first place!?
